Here we are at the end of my second year of blogging. It’s been a lot of fun as always. This year was about growing the blog, exploring various thematic directions and making improvements in my photos and writing. As a plant loving omnivore, the opportunity to devote one day a week to vegetarian meals was too tempting to pass up. I really enjoy creating my Meatless Monday posts and sharing them with you. According to “the Google” the posts listed below were the most popular meatless recipes on the blog in 2014.
5 Butternut Squash & Spinach Lasagna: I’ve shared many butternut squash recipes and why not? We like to have roasted squash chunks on hand to use in smoothies, throw on salads and use in casseroles. This lasagna is a delicious way to showcase one of the most nutritious vegetables available. The preparation is a bit involved, but not overly difficult. It’s definitely worth the effort to make this.
4 Red Beans & Rice: This is actually a recipe from my first year blogging. It remains popular both on Google and in Pinterest. Such a simple meal loaded with Cajun flavor.
3 Wake Up Oatmeal Cups: If you’ve followed the blog for any amount of time, you’ll know I’m a big fan of Mark Bittman’s Vegan Before 6 approach to flexitarian eating. My big challenge was eating a vegan breakfast. Wake Up Oatmeal Cups were one of my solutions. They use flax as a binder instead of egg and coconut oil instead of butter. Best of all, they taste delicious!
2 Mujaddara: This is a Lebanese meal of lentils and rice seasoned with cumin and other Middle Eastern flavors. It’s another holdover from 2013. I “revisited” the recipe and took new photos, something I need to do for many of my other posts. The new pins and interest from some of the foodie photo sites pushed it back up to the top. This meal has become comfort food for me. I encourage you to give it a try.
1 Rustic Onion Tart: If you’re an onion lover you don’t want to miss this recipe! With caramelized onions and a no-fuss cream cheese crust you may not want to share! It’s Number One for a reason.
Meatless Mondays will continue in 2015; I’m looking forward to bringing more meatless options to you. In addition, I’ll be putting a flexitarian spin to a themed recipe every month as part of the Recipe ReDux blogging group.
