Can you believe another week has gone by and it’s time for Meatless Monday once more? This week I’m revisiting my peanut noodles with vegetables.
We’re fans of Thai and Vietnamese flavors and the peanut sauce in this recipe is pretty good. It would work as a the base for a dipping sauce, too. If you want to add some protein, keep it meatless by using tofu, about 2 ounces per person. I’d pan fry it and serve it separately from the noodles.
