Welcome to a new month of Meatless Monday recipes! We’re heading into the holiday season where the food tends to be very heavy. Lighten up by making a choice to eat more vegetables whenever you can. My favorites from October offer a great place to start:
Starting in the top left corner we have one of my favorite meals: beans and greens. In this case, it’s Escarole and Cannellini Beans from Ducks in a Row.
Next up is a clever eggplant lasagna without cheese or pasta. This recipe, from O Blogger Newbie, makes a great change of pace from traditional lasagnas which tend to be very rich whether meatless or not.
Pictured in the bottom left corner is a yummy looking Seasonal Peach and Almond Cream Smoothie from Urban Naturale. What a delicious way to start your Meatless Monday!
Rounding out the October favorites is a Raw Salsa Verde from A Dish of Daily Life. Isn’t it gorgeous? It’s hard to believe something so full of color and flavor can be made in under a minute.
There’s an entire day’s worth of Meatless Monday meals. I’ll let you in on a little secret, too. Fruits and vegetables pack a lot of nutritional bang for their caloric buck. That means you can generally eat larger portions (or perhaps a second helping). Just don’t go overboard with things like salad dressing and cheese.
