Do you enjoy the challenge of Meatless Monday? I know I do, especially when I can eat delicious food like these favorites from the July Meatless Monday party:
- Don’t these Portobello Lasagna Stacks & Asiago Cheese from McCallum’s Shamrock Patch look fancy? Isn’t good to know you can make (and eat) them at home?
- I love lentils and rice. My favorite dish is a bit involved to make without planning ahead, so I was really excited to see this Easy Lentil and Rice Casserole from Lucy’s Nashville Nest. It would be simple to alter the seasonings to match your mood.
- Del’s Cooking Twist brought these yummy Breakfast Bell Pepper Tots to the party. They’d be great to make ahead for an on-the-go breakfast, lunch or snack.
- Last, but not least, I’m digging these Cucumber Sandwiches with White Bean Hummus from Feeding Big. I always have a can of cannelini beans in the pantry and we’ve been eating cucumbers left and right this summer.
