Happy Labor Day! Welcome to a brand new month of Meatless Mondays.
September is a month of new beginnings. It’s the start of a new school year and our favorite teams are playing fall sports. Along with the change in the air, many of us find this a perfect time to begin a new habit– like introducing our families to Meatless Mondays.
Going meatless one day a week is good for our pocketbooks, our bodies and our ecosystem. This is our third month of hosting this link up and there have been some very flavorful recipes shared. You’re sure to find something you’ll family will love. Let’s start with my personal favorites from August.
The party starts with a very fancy Quinoa Crusted Eggplant and Heirloom Tomato Stacks from Shaina at Take a Bite Out of Boca. She bills them as an appetizer, but I could easily make a meal out of them.
Our second feature is Grilled Brussels and Monterey Quesadillas from Kim at Food and Happiness. This is a fun recipe that uses brussels sprouts in an imaginative way. I made them last week and they were a big hit.
At Number Three is a Chili Relleno Casserole from Cindy at Seasonal and Holiday Recipe Exchange. This has all the flavors of chiles rellenos without all the work!
Rounding out the August favorites is an incredible Roasted Carrot Gnocchi from Theresa at Food Hunter’s Guide. I’ve made pumpkin gnocchi before, it’s not that difficult to make them from scratch. Carrot gnocchi sounds fabulous! I can almost taste them with a little brown butter sauce.
All of the featured recipes use vegetables that are currently in season. You’ll have more trouble deciding which to make than finding the ingredients!
