Who doesn’t love a great burger? In our home a great burger is one of life’s little pleasures. Since it’s Meatless Monday I thought I’d share a few of our favorites made from a variety of beans, lentils, mushrooms and vegetables. You won’t go wrong with any of these.
Lentil Loaf: This meatless loaf is loaded with carrots, zucchini, sunflower seeds and of course, lentils. It’s as simple as mixing all the ingredients, forming into a loaf and baking.
White Bean Patties: The first time I made white bean patties was after making a biiiiiig batch of beans. White beans are more tender than some other types, but they formed a patty which held its shape after frying.
Red Lentil and Bulgur Patties: I had a bulgur wheat party last Summer and one of the recipes were these delicious patties served falafel style in a pita. We had to force ourselves not to eat them as soon as they came out of the pan.
Mushroom and Nut Burgers: Of all the meatless burgers listed here these are probably my favorites. There are so many variations depending on the mushroom and nuts chosen. They are magnificent served with your favorite burger toppings.
Zucchini Fritters: These veggie filled delights are often served in the tapas bars of southern Spain. We loved them with a fried egg on top. You will, too.
All of these recipes can be made vegan style and gluten free with appropriate substitutions. Do you have a favorite meatless burger?
