Zucchini Rice

Serves: 6 servings
  • ½ cup chopped onion
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon cumin seeds
  • 2 bay leaves
  • ½ inch piece of cinnamon (or ¼ teaspoon ground)
  • 4 dried red chilis (more or less)
  • 1 teaspoon salt
  • pepper to taste
  • 1 cup basmati rice
  • 1 cup finely shredded zucchini (leave the peel on)
  • juice of half a lemon
  • 2 cups water
  1. Use a heavy sauce pan or skillet to saute the onion in the butter and oil over medium high heat.
  2. When the onion has softened add the seasonings and cook briefly.
  3. Add the rice and stir well to coat the grains with the oil and seasoning. Cook for
  4. Add the zucchini and combine again.
  5. Stir in the water and lemon juice then let the whole mixture come to a boil.
  6. Reduce the heat to low and cover the pot with a lid.
  7. Cook until the rice is tender, about 18 - 20 minutes. There may be some liquid left but the dish is done when the rice is cooked.
