Ham and Egg Roll Ups
Serves: 4
  • olive oil or butter for saute
  • ¼ cup diced onion
  • 1 small tomato, seeded and diced
  • 2 large handfuls baby spinach
  • salt, pepper, other seasonings to taste
  • 2 large or 3 medium eggs, beaten
  • ½ cup shredded cheese
  • 4 (or 8) slices of deli ham
  1. Saute the onion in a small amount of butter or olive oil until soft.
  2. Add the tomatoes and spinach and stir until the spinach is wilted and the tomatoes are heated through.
  3. You can scramble the eggs and cheese with the veggies or separately, I do it all together. The eggs should be soft and fluffy.
  4. Season to taste
  5. To assemble, place a slice of ham on a flat surface with the short end facing you. If the pieces are short, overlap the slices to increase the length.
  6. Spread the filling across the bottom of the slice and roll up. Secure with toothpicks are required.
  7. Repeat with the rest of the ingredients to make 4 roll ups.
  8. Serve as is or prepare a square baking dish with cooking spray and arrange the roll ups seam side down. Scatter some more cheese on top and bake in a 375F oven until the cheese has melted and the ham takes on a little color.
