Toasts with Pork Tenderloin, Blue Cheese and Orange
Serves: 3 servings
  • 4 - 6 baguette slices
  • pork tenderloin about ¼" thick, seasoned with salt and pepper. Less than half a pound should feed two or three people
  • Roquefort cheese sauce or Blue Cheese Salad Dressing
  • Orange slices and parsley for garnish
  1. Toast the baguette slices on a grill pan to get marks on both side.
  2. Arrange the slices on a tray and spread with Roquefort or Blue Cheese dressing
  3. Meanwhile cook the pork in the same grill pan. It will take about two minutes per side. I like to let the marks form.
  4. Arrange over the toasts and top with orange slices and chopped parsley.
