Minted Fruit Salad
Serves: 3 cups
  • 1 medium apple, cored and chopped
  • 1 medium cucumber, peeled and chopped (deseed if necessary)
  • 1 banana, peeled and sliced
  • about a cup of chopped strawberries
  • 1 medium orange, peeled and chopped
  • any other fruit you'd like to add
  • 2 tablespoons mixed seeds (I used a commercial mix with chia, poppy, sesame and sunflower seeds)
  • chopped fresh mint
  • juice from a large lemon
For the spice mix
  • 1 tablespoon garam masala
  • ½ teaspoon cayenne powder
  • a couple grinds black pepper
  • a pinch of salt
  1. Mix the spices together and set aside.
  2. Mix the fruit in a large bowl. Sprinkle with the spice mix.
  3. Add the lemon juice, chopped mint and seeds.
  4. Stir to mix.
