Pantry Dinner: Gnocchi With Peas
Serves: 2 servings
  • 1 package fresh or frozen gnocchi
  • ½ medium onion, chopped (not shown but recommended)
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon butter
  • pinch red pepper flakes
  • 1 can peas (or two cups frozen)
  • ¼ cup grated hard cheese
  • chopped fresh or dried herbs (I used dried parsley)
  1. Cook the gnocchi according to package directions. Skip to the next step if using fresh.
  2. Meanwhile heat the olive oil and butter in a large skillet with a pinch of red pepper flakes.
  3. Saute the onion until softened.
  4. Drain the gnocchi and add to the onions, stirring to coat. Continue to cook the gnocchi until they begin to turn golden brown. Stir gently to prevent over browning.
  5. Add the peas and mix. Season with salt, pepper and herbs as desired.
  6. Mix in some grated hard cheese before serving and garnish with more herbs.
